As for changing the race, you can do that in CK or TES5edit, but I don't know what ramifications that will have on gameplay. 1. Everything else is either unrelated to the NPC's appearance, or is just actual junk creation kit data (for instance, Nam9 - Face Morph and everything below that is literal junk only used for viewing/exporting the head in the creation kit).
